Secret Ingredient Chocolate Mousse 

vegan, gluten-free

Based on Terri Edwards' recipe on eatplant-based.com

What?!! Tofu for dessert? This mousse is so creamy and luscious, even tofu skeptics love it. It's also low in fat and high in protein and fiber. Not many decadent desserts can boast those qualities!

Serves: 3-4 / Active time: 10 min / Total time: 1 hour 10 min
Ingredients:​ 
  • 1 package (12-14 oz) silken tofu*
  • 1/4 cup (25 g) cocoa powder
  • 1/4 cup (85 g) maple syrup or agave nectar
  • 1 tsp (4 g) vanilla extract
  • 1 Tbsp (15 g) peanut butter (optional)
  • Fresh berries and/or cacao nibs, for topping (optional)
Directions:​
  1. Open carton of tofu and drain excess water, then put drained tofu into a blender or food processor.  
  2. Add cocoa, liquid sweetener, vanilla extract, and optional peanut butter. Blend until completely smooth, pausing to scrape down the sides as necessary.
  3. Chill mixture in serving bowls for one hour or more. Then top with fresh berries and/or cacao nibs and serve.
*Look for the shelf-stable silken tofu cartons in your grocery's Asian foods aisle. Sometimes grocery stores carry a brand that is in the refrigerated section with the other types of tofu. Either works for this recipe - just make sure it's silken tofu.
