Creamy No-Bake Pumpkin Pie
vegan, gluten-free, grain-free, soy-free
Adapted from a recipe on MinimalistBaker.com
This is a luscious, creamy pie that is sure to impress all your pumpkin-loving friends (but without requiring too much effort)! If you've ever felt intimidated by the thought of making a traditional pie crust, this is the recipe for you! This healthy whole foods crust couldn't be easier to make: just process the ingredients in a food processor and press into a pan.
The texture of this pie is not quite as firm as that of a traditional baked one, but no one needs to eat it with their hands anyway, right? (If you're looking for a pumpkin treat to eat with your hands, try these muffins. If you're looking for a ultra-creamy frozen spin off a pumpkin pie, try this pie). The coconut whipped cream is optional, but well worth making. Don't worry that it will be too coconutty - the vanilla extract helps even out the flavor. So, get your ingredients, put that can of coconut milk in the fridge overnight, and let's do this!

*This will use about half of a can of pumpkin. What can you do with that leftover pumpkin? Make Pumpkin Spice Muffins, a Pumpkin Pie Smoothie, Pumpkin PB dog treats, or feed (a few Tbsp at a time) directly to your dog!
**If it does not firm up right away (Some cans are duds), add a couple Tbsp of tapioca flour and it should thicken right up! ***If you end up with extra coconut whipped cream, try this extra special treat: stir it into a cup of coffee or hot cocoa! |
